Belated Happy 2013!

A huge amount has happened since I last had chance to write a blog. I know it is already the end of January and this is pretty belated, but I hope you all had a lovely Christmas and New Year.

We’ve finally had a bit more time for experimenting in the Raw Kitchen – something that I know had been missing or lacking in recent blogs. The next section is pretty picture-heavy!

New Year Truffles – I wanted to do a special meal for us over New Year. Ian was working until late, so we didn’t have chance to go out and do anything. I completely forgot to take any pictures of the main course, but these are our ‘midnight celebration’ truffles. I hadn’t made truffles before and they were amazing! They were a coconut oil and cacao powder based filling, rolled in lucuma or beetroot powder.

Avocado-Kale Salad – I thought this deserved to be shown, simply because it was so full of flavour and texture. Inspired by The Nectar Cafe in Norwich (more on them later), it is made from dressed kale, iceberg lettuce, carrot, onion, celery, peppers, tomatoes, avocado, sultanas and red cabbage.

Burrito – Mmm. A burrito. Actually, I’d never had a burrito before, so I can’t tell you for sure if this is what one should taste like or not. I did share one with Ian and he seemed to think it was pretty close, so I’ll take that as a complement! The wrap is made from carrots, spread out into a sheet and dehydrated until pliable. The filling is mixed sprouted seeds, tomatoes, spices and nutritional yeast… all rolled up together and dehydrated for a little longer. Yum.

Lasagne with dried courgette pasta – The first ever raw dish I made was a lasagne, but this one is a little different. Instead of using very thin courgette for the pasta, I made it into a wrap (like the burrito) and cut it into sheets. The whole thing held together perfectly when it was cut up and all of the layers were visible – tomato, courgette pasta and nutless cheesy sauce.

Agar Jelly – I’ve had a lot of fun playing with agar. I’ve made various flavours of jelly, using a lot of different methods and flavours. This one was berry flavour.

Creamy Tagliatelle (It tasted amazing) – madee from courgette, mushroom, cauliflower, pepper and tomato with a creamy cashew sauce. I know it looks a little… er… gross, but the taste more than made up for its looks!

Cauli-Cauli, Dressed Kale, Veggies, Mushroom Slices & Haricot Bean Hummus – I can’t tell you how good the cauli-cauli was! I did write the recipe down somewhere so I can definitely make it again, yay! I know the haricot bean hummus wasn’t raw, but it was completely home made. The mushroom slices were a mixture of dehydrated mushrooms and seeds, I’d usually make them into burgers but the mixture was too soft so I made slices instead.

Vegan Yogurt – I know that the ‘standard’ raw way to make yogurt is using young coconuts… but there is one problem with this. I can only find them in boxes of 12 by mail order, and as much as I like yogurt (and the few other things I can do with them), I just don’t need 12 of them. So, I’ve found a work-around using gluten-free Xanthan Gum as a thickener instead. Strawberry, mango and vanilla are my favourites so far and I have made a lot of them in the last few weeks!

On Sundays, I always try to do a special meal for us. As we work around the clock, Sunday evenings are about our only option for a sit-down meal at a normal-ish time. Mine wasn’t raw this week, but still vegan and very tasty. Pie, Veggies and Cheesy Cauliflower Mash. I think the mash would also work raw, but I haven’t tried it yet. Made from steamed cauliflower, nutritional yeast, black pepper and salt, it really was good.

This next link is not safe for work! You may well have heard of Naked Vegan Cooking. It is a blog promoting veganism and positive body image. Well, I decided to submit a recipe for my courgette lasagne. Different to the one pictured above, this one uses courgette strips, pesto and a lovely tomato sauce. We have also managed to get out and about a little, and have managed to visit two raw places since our last blog. 42° Raw in London and the Nectar Cafe in Norwich.

42° Raw is a little cafe situated in an art gallery (I think that is correct), close to Oxford Street in London. As with most raw things, the majority of their dishes contain nuts, so Ian was limited with what he could have. He opted for an avocado and tomato salad (of which I stole a little) and it was amazing. I had a lasagne, and although on the small side, it was very well made and presented. Of course, I also had to try dessert so a chocolate-orange torte was called for. It was the first cake I’d eaten for a while and it hit all the right spots. I was a little too busy stuffing my face to take many photos, but I did remember before I polished off all of the dessert…

The Nectar Cafe is a lovely baby cafe just off Unthank Road in Norwich. We hadn’t been into there before, but had tried some of their food. (Skip back to December when I had a birthday. I didn’t want to make all my own birthday food, but still wanted to stay raw, so collected a supply of raw-dee meals from them. Dressed salads, crackers, nut cheese, nut roast, cheesecake, flapjack, chocolates and I’m sure something is missing from that list! Everything was fantastic and I couldn’t have asked for a better birthday lunch, dinner and sweet treats!) We had a kitchen accident a few weeks ago (more below) and after a few hours of cleaning, I just had to get out of the house. Finally, we were both free on a day that the cafe was open, so we set off for Norwich. Parking was a little awkward, but I’m sure the idea would be to park in the city and walk out to the cafe… or just look a little harder for spaces! The food was unbelievable and the atmosphere was very personal – just what I like. The cafe is very small; a little breakfast bar and two tables to sit four or 6 people on each. There are a few cooked options, raw options and a variety of drinks to choose from. We both started with decaf coffee, Ian’s with cows milk and mine with almond milk. The main course was a sandwich on artisan bread for Ian and a quinoa-base with a salad of kale, grated root veg, falafels, flax crackers and home made hummus for me. Big yum! To take away, I had a lovely piece of fruit cake and Ian had a smoothie. I didn’t take a single picture, so of course I will go back and take some whilst stuffing my face. It would be rude not to really!

So, onto the kitchen incident. We were awoken rather rudely one morning to a huge bang. I immediately looked out of the window, expecting to see a car accident, but all was okay. Ian went to have a look downstairs and my raw stock shelf had… er… fallen down a little. Okay, a lot. Kilo upon kilo of ingredients were all over the floor amongst a lot of broken glass. Kilos of powders (cacao, lucuma, carob, vanilla, beetroot, maca, wheatgrass, spirulina, strawberry to name a few) were everywhere and you could taste the cacao at the back of your throat as you breathed in. To top it off, there was a good 5+ litres of agave and sweet freedom on the floor too. I’m not sure I have ever seen such a mess in a kitchen, and such an expensive one too. I’m sure that when you see the picture below, you can see why we tidied up and went out for lunch.

At the beginning of December, we met up with Keith from Keith Mindham Photography in Thetford to have some pictures taken of our products. We had a four hour session, and have lovely, crystal-clear photos of all the goodies we had in stock at the time. You may have noticed these replacing older, poor quality photos in our shop. We do still have some more to take, and will eventually meet Keith again once we have had time to make all of the missing nibbles.

We have added a number of new yummies to our shop in the last few months. We now have an ingredients section; with cacao powder, cacao butter and lucuma powder. We have raw chocolate & hazelnut spread!

We also have a sale section too. And, if you’re on the hunt for some cheap organic cacao butter, then this could be the place to be. £10 for 1kg; reduced as it needs to be used by May this year. We also have a few chocolatey bits appearing here every now and again, so it is one to keep checking.

The Raw Kitchen never stops!

Finally, a few minutes to sit down, have a large smoothie and write a little blog. There has been a huge amount happening for Raw Nibbles in the last month, so I’ll do my best to tell you about it whilst slurping on a pint or so of green smoothie. I’m afraid there isn’t a recipe included in this blog… I simply haven’t had the time to write a ‘proper’ one for you.

So… these green smoothies. What are they all about?! Since I’ve been raw, one thing I haven’t touched is a green smoothie. For me, the idea of having a bucketload of blended green veggies really doesn’t appeal. Unfortunately, over the last few months, I have been so busy that I have neglected my own meals and one thing I really hadn’t been eating was any green vegetables. I hadn’t been feeling too well, and I finally pinned down what it was. To fix this, I’ve been having semi-green smoothies for breakfast. They are generally consisting of some spinach, a load of berries or other fruits, maca powder, cacao powder and some nut milk. They are healthy, filling and I love them! I know I said this blog wouldn’t have any recipes, but I do have time to quickly type a few smoothie concoctions:

Todays smoothie (I didn’t weigh things, so these weights are estimates) was:

200g Mixed frozen berries, 3 peaches, 150ml Almond Milk, 1/4 pineapple, 1/8 Avocado, around 80g spinach, 50g Date Paste (roughly 2 parts water to 1 part medjool dates – a leftover in the fridge that needed using), 20g cacao powder, 10g Maca Powder and a squeeze of agave nectar. Mmmm!

There are a few other similar concoctions that I have been enjoying as well. I have made these several times, the weights are accurate and I even worked out the calorific content too!

Choco-Spinach-Berry Smoothie: 280 – 300 calories

165g Frozen Strawberries & Blueberries, 120ml Water, 56g Spinach, 1/4 Avocado, 14g Xylitol Crystals, 10g Cacao Powder, 5g Maca Powder and finally 10g Cacao Nibs to sprinkle on top.

Mango, Melon & Berry Green Smoothie: 260 calories

200g Mango, 130g Honeydew Melon, 75g Frozen Berries, 50g Spinach, 10g Lucuma Powder, 5g Maca Powder.

Mango, Berry & Nectarine Green Smoothie: 385 calories

200g Mango, 150g Nectarines, 150g Frozen Berries, 75g Spinach, 15g Lucuma Powder, 15g Xylitol Crystals, 7g Maca Powder.

A few weeks ago, we had a brief trip down to the lovely and pretty west county. There were two points to this trip – we were off to see Annabelle from Avalon Elf Coats She is making my coat for our wedding in June next year, so I wanted to visit and select some jumpers to have my coat made from. A few days before, I asked her if she had any requests for the raw kitchen, and kale crisps were mentioned, so I got to work… (More later!). It was lovely to meet Annabelle and Paul. We had a really good night, chatting, eating (raw pizza, kale crisps and Annabelle’s lovely lime pie) and selecting jumpers for my coat.

The next morning, we were off incredibly early to see Rosie Locks in Bristol. Rosie is the queen of all things dreadlock related! Ian was in for a (well overdue!) tidy-up and dread maintenance, and I was having some wool dreads put in. Rosie handmakes the wool dreadies and then braids them into your hair in super-quick time. Her work is amazing, so tidy and professional. I’d been worrying that a 400+ mile round trip might not be worth it, but we were both super-happy customers. Ian no longer looks like he has been dragged through several thousand hedges backwards, but has a tidy set of locks. My wool dreads looked awesome too, mainly blonde with a few coloured ones hidden between.

Unfortunately, I didn’t think it though though. There were two problems with my new dreads. The first and most annoying is that I seem to be allergic to alpacka wool. The second (which is totally my fault for eyeing up pretty dreads and not thinking) is that making things in the raw kitchen whilst moulting fluff everywhere really isn’t practical. The moulting fluff would have stopped after around a week so I could have got to work, but I ended up so itchy, snuffly and sore from the wool that they had to go. Its a damn shame and I really want them back, but… I’m back off to Bristol on Friday to see Rosie! I’ve decided to go for something much more practical – permanent synthetic dreads. These shouldn’t moult at all, so no problems in the raw kitchen, and I know I’m not allergic to synthetic hair… so its a win-win situation. I can’t wait! I don’t have any pictures of Ian’s tidied locks here, or I’d post a before and after picture of him too.

 

The week before we went to the West Country, we also went to London. (Apparently it’s the month for us to be travelling all over the shop.) We decided to spend the day in London before seeing Radiohead at the O2 Arena. Our plan was to pop round the museums in the morning and then go off to the inSpiral Cafe for lunch. For those of that haven’t heard of inSpiral, they are a raw cafe. I’d been looking forward to this since we booked Radiohead about six months ago and it was definitely the highlight of my day. For the first time since going raw, someone else made me a meal… and it was amazing! I had a mushroom burger with a few mixed salads, followed by a cheesecake. Mmmmm! I also got some fudge and granola to take to Radiohead for Sophie food too. After stuffing myself stupid (and Ian having a little meal, since most things contained nuts and that’s not soo good for him!), we got on our way to the O2. A bit of queueing later, and we finally landed in our seats. There’s not much more to say really… we ended up sitting in a sound-dead spot, and it made the sound quality for the entire gig terrible. Some notes made your head feel like it was going to explode, and things were so distorted that you couldn’t even work out what song it was. I feel really sorry for Ian, Radiohead are one of his favourite bands and he’d been looking forward to it for a long time. On the plus side, I enjoyed scoffing my fudge and granola from inSpiral while my ears were hurting!

 

I’ve been putting in ridiculous hours for the last few months. I haven’t had a proper day off in around six months now, and I am constantly working 12 – 18 hour days. It wasn’t so bad when the raw kitchen was still at home, but since being at the unit, my hours have increased considerably. We’ve been thinking about this quite a lot, as I am really starting to struggle. I know raw food generally means you need a bit less sleep and so-on, but you also need some time off and a bit of rest… not repeated 5am starts and 10pm finishes. So, we’ve found us a new house to rent, which is big enough to move the raw kitchen in to. We’ve got two weeks left until we move and we can’t wait. There will be tonnes more storage space for all of our ingredients and products… and I won’t be leaving the house at silly o’clock to get some butter melting or pack orders. The unit really has been a god-send, but it is now time to move on. As soon as we are settled in, I’ll add a picture or two of the new raw home!

 

I think I mentioned kale crisps above. Our visit to Annabelle got me thinking – why don’t I have kale crisps in the shop?! Well, now I do! There are currently three varieties to choose from: Cashew-Caramel, Cheese & Onion and Chocolate-Hazelnut. And they are all amazing! I ate way too many on our trip to Bristol and Taunton, the are so more-ish. So, if you’re hungry, take a little trip over to the shoppe: Kale Crisps

I made this for my dessert on Sunday – we’re having a few old friends to dinner and I wanted to make sure I wasn’t left out. I’m also in the process of making raw breadsticks and a raw mushroom & spinach tart, but they are still being made, so there are no photos yet!

Rawsome Battenberg Cake!

I was super-busy in the raw kitchen on Friday, preparing for the Big Onion Festival in Elveden, Norfolk.

The Toblerone and boxes of chocolates came about as I’d ordered some new chocolate moulds and really wanted to see what I could do with them. I love the detail on the little chocolates, and also thought it would only be fitting to do an almond-based chocolate in the triangular moulds. Both will be available in the Raw Nibbles shop soon.

The Battenberg cake was incredibly popular, so I ended up grabbing the last piece off the table before it sold as I wanted one to have with my dinner. It is another one that obviously can’t be posted, and as I’m so chuffed with it, I thought I’d share the recipe with you. I hope you enjoy making and eating this as much as I did. I’d also like to apologise for the recipe quality – I have to run it through several converters and this is what I end up with!

Another belated blog… with a rawsome recipe!

I think I need to apologise again for taking so long to write another blog. Things at Raw Nibbles have been manic and we haven’t stopped at all. Part of the reason for no blog updates is that I’ve only been making products to sell (and eating the leftovers!), rather than creating anything new. But, I finally had chance to make something new yesterday and although I will be selling it at farmers markets, I can’t post it – so I thought I should share the recipe.

 

We had a stall at Porringland Farmers Market yesterday. It was our fourth appearance at Porringland, and people are starting to get to know us and our products, so we have some regular customers which is really nice. We’ve also got one lovely lady called Jane, who always places an order at the beginning of the week. Her order this week was for raw vanilla ice cream and some samosas. Everything I make for her orders is always greatly appreciated, so thank you Jane for making our nibbles feel valued!

A move, a new unit, a dinner party… and a tired Sophie!

I’d like to apologise for the huge delay in getting a full blog out to you all. I’ve not stopped at all in the last few weeks; each day has consisted of around 14 hours work, four hours sleep and a lot of running around in the middle.

We’ve moved house, and as a result, raw production has had to move as well. I’ve spent the last two weeks working from a friend’s kitchen. I’ve still managed to do a lot of making and creating, but almost no photo-ing! But, thanks to Ann, I now have a new unit to produce all of my raw goodies in.

The new unit is amazing. It is totally dedicated to my raw production, I’ve got tonnes of storage space, a fridge and freezer to myself, a sink big enough to get my dehydrator trays in, and not an oven in sight! The unit has been ‘kitted out’ by my mothers husband, Mr Ian. I’d like to add special thanks to him here as well. There’s no way I could have achieved this on my own. I don’t have a van to get the bits there, the tools to put it all together, or the skills to do so! So, thank you Mr Ian… from the bottom of my heart! As well as giving up a day to build it in super-quick time, he also sourced all of the worktops, sink, tiles, paint and everything else I’ve forgotten; and had all of the tools to make it happen. He planned the design to give me optimum raw creation space, built me a packing area – the whole works. And, it is fantastic – I’m one proud raw chef! There are still a few things to do – we need to add splashbacks and tiling all the way around the worktops, and add a few other shelves under the packing area. But, I’m a super-happy little raw, vegan chicken!

I didn’t take any pictures of the state of the place when I got there. By the time this was taken, I had removed two hover-fulls of rubbish from the floor and cleaned all the walls. We had also painted the roof and walls.

So, that’s how awesome my new raw home is looking. I’m so pleased with it, and have already got my first orders made, packed and out the door!

 

I also did a three course meal, plus pre-dinner nibbles and post-dinner chocolates for six people. Everything went down incredibly well!

An apology!

I just wanted to apologise for the lack of update over the last few weeks. I’m in the middle of moving house as well as raw production! I’ve spent all of my time in the kitchen recently, mass-producing chocolate, brownies, cakes, crackers, tortillas and spicy seeds to make sure I have enough stock for orders and markets whilst the kitchen is travelling! I’m also moving the raw kitchen into an actual unit on the 1st July, so I will have a fully-dedicated raw space, instead of commandeering half of our home kitchen. I can’t wait, and I’m sure there will be a new awesome creation to go with the move.

There will be a long update soon – we’ve been busy little bees at lots of farmers markets, updating some of our packaging, creating new things and generally rushing around.

There will also be a few additions to the shop – we’ve got photos of all the new yummies, but haven’t had time to upload them and add the product details yet. You can expect to see flax crackers, corn tortillas, red pepper tortillas fairly soon! I will also be adding two little recipes to go with the carrot cake and carrot salad I posted recently. I made a lovely icing for the carrot cake, which you really must try, along with Macadamia mayonnaise for the carrot salad – so watch this space!

There is also a new type of chocolate on its way to the shop – cacao crispy. It is the raw nibbles version of chocolate with rice crispy bits in. It’s lovely – I’ve eaten far too much of it over the last few weeks!

Right, I must make a move! I’ve got to set up at a market in less than an hour and I haven’t even packed the car yet.

Another craft fair and a carrot salad!

We did another craft fair last weekend in Wymondham, Norfolk. I have to admit that it was a pretty empty event, and after speaking to other stall holders, we all get the feeling that it wasn’t well advertised at all.

Having said that, we still sold some goodies, and also ended up with a handful of useful contacts for future events.

And… on to the amazing chocolate-hazelnut layer cake! I’m going to be blunt here, I simply can’t bring myself to give this recipe away. It is going to remain as one of my little secrets! I made them for the craft fair last weekend, and they are absolutely fantastic. I was so pleased with how they came out – flavour, texture and the glossy shine on them as well. I honestly couldn’t have been more pleased with the end result – so much so that I made two batches back-to-back! Carrot Salad

A successful craft fair

I attended my first craft fair as a seller on the 12th and 13th May. I honestly had absolutely no idea what to expect – all I knew about the fair was that it was a small event in Glemsford, Suffolk.

I’d spent the week before making mammouth amounts of everything to sell. I ended up with 15 totally awesome double chocolate brownies, 47 bars of various types of raw chocolate, 8 bags of chocolate-coated Brazils, 11 pots of spicy seeds, 8 pots of Grawnola, 4 pots of white chocolate chewy bites and 4 pots of choco-caramel chewy bites!

The end result was fantastic. Not only did my stall look really pretty and effective with all of the Raw Nibbles packaging, I sold around 75% of the stock I took with me, and had some lovely comments.

 It took a lot of making, but I really did have a good time. I met a few people that have give me more information about local craft fairs, so I will definitely be looking into that, and trying to get out there every weekend if I can!

I will be at a craft fair in Wymondham this coming Saturday (the 26th May) and also at Risby Farmers Market the following Saturday (2nd June). I really hope the next two are as successful as this one was -and I hope people continue to love the Raw Nibbles!

And, onto the raw kitchen! From now on, there is likely to be one little addition to my blogs. I have to admit that the updates will be a little less frequent, but from now on, they should include a recipe for something tasty I’ve made and thought I really must share. I hope you enjoy the making as much as I have!

Besides bucketloads of chocolate, I’ve made a few yummy things in the last two weeks as well. So, here they are, for you to gawp at, and wonder if it is time for some lunch!

Thai Salad (with pizza and leaves)

Plum Tomato & Olive Salad – this salad was lovely. Really full of flavour for something so simple. For a dressing, I drizzled it with rapeseed oil. The funny stuff on the side is a mixture of raw carrot bread and raw courgette-onion bread.

Layered Fruit – I’ve had a few lovely layered fruity breakfasts and desserts recently. The layers have been made of fruit (obviously!); a sauce layer, such as mango pudding, caramel sauce or lemon curd; and a ‘filling’ layer, which has been either Grawnola or sprouted wheat bread.

Berry Cheesecake – I thought it was about time that I made another cheesecake. I had a bundle of blueberries in the fridge, so decided to make a vanilla-blueberry cheesecake. It was lovely!

Carrot Cake - The carrot cake was amazing. Crisp on the outside and gooey on the inside, just like a real cake should be. If you’ve read this far, then there is an added surprise for you. As well as a carrot-cakey photo, I thought I’d add the recipe too! It is definitely worth making; and if you do, I hope you enjoy it.

A somewhat belated blog

For those of you that keep up with our blog each week, you may have noticed that this one is somewhat late. A week late in fact. But, we’re not being lazy, just more busy than you can imagine in our little hippy world!

As you are probably aware, we started purely as a blog in January 2012. A that point, we were known as Raw Love – the name was picked because of my love of Raw Food. We didn’t look into the name at the time, all we wanted was a little website and blog so that people could keep up with the many things we were trying in the raw kitchen.

Skip forward to the beginning of May. We’d been designing packaging for our tasty treats, adding bits to the website and extending it, creating business cards and leaflets (all on recycled paper!) and getting ready for craft fairs. At this point, we did a check on the name Raw Love. And as I’m sure you’ve guessed, someone was already trading under that name.

So, we’ve had to do a mas re-name and re-brand. We managed to get the majority of the website done in a day last week, but it took a few days more for the blog to start working again. (No thanks to our hosts there.) We also re-designed and re-printed all of our packaging and stationery. We do print everything ourselves so it isn’t a costly exercise, but is very time consuming. All of the packaging and stationery is designed by me, and apparently I deserve some credit for my time and skills!

So, we are now Raw Nibbles - www.rawnibbles.co.uk or www.rawnibbles.co.uk/blog. And, we hope that you all approve.

Last week, we also started preparing for a craft fair on Sunday. We’ve been busy little raw kitchen bunnies! We’ve made a massive amount of spicy seeds, choco-chewy bites, bars of super-good raw chocolate and of course, some brownies. There will also be some mass-Grawnola creating before then too. It will be the first craft fair we’ve done, so we’re really hoping people like our raw nibbles. (Catchy eh?!)

On top of all of that, I spent Thursday getting tattoo’d again – but, I think my work is almost finished now. Something in the region of 50 hours we think! But, it does look good. Once it is fully healed, we’ll post a picture or two.

On Saturday, I went to meet up with a photographer and friend, Paul Monk - http://www.paulmonkphotographer.co.uk/ to have some pretty photos taken of all of our new treats in their amazing packaging. We’re really pleased with everything… and…

…you can now see it all in the Raw Nibbles Shop! - shop.rawnibbles.co.uk. Currently, we’ve got six tempting types of raw chocolate bars, buckwheaties, Grawnola, spicy seeds, chocolate-coated nuts, and crispy choco-bites. What could be better?! We will be adding improved product descriptions and additional photos soon, but we just wanted to get the shop up and fully working first. There are also new snacks and nibbles on their way!

By this point, it was Monday and we were exhausted. That didn’t stop us though, we still managed to make 47 bars of chocolate and 10 bags of chocolate-coated nuts!

There is one additional plan on the way too. We’re looking to start to host our recipes as well so that as well as seeing the delights we’ve been creating, you can also try them yourself. Is this something that you would like to see?

So, onto a small amount of photos. As we’re sure you will understand, we haven’t had much time for food photography in the last few days!

We made raw lemon curd. It really was lovely too, super lemony and amazing on sprouted wheat bread. It has been my stable breakfast for the last week or so!

This was our minor ‘test’ chocolate production session. They were all for our own consumption… we were… er… quality control testing. Yep, that’s the one! When we make in big batches, we only do one type of chocolate at once, but when testing, we have to multitask!

We’ve had more raw berry-apple crumble with ‘Rawberry’ custard too. It is amazingly good!

On my way back from ‘product photography’, I took a little trip around a few farm shops to pick up some bits for dinner. One of the things I created was raw pickle, and it was absolutely fantastic! I hadn’t had pickle for a ridiculously long time because of the sugar content, but this entire jar has been eaten in four days!

I made raw spaghetti bolognaise, using courgette noodles with a lovely tomatoey-veggie Italian sauce. It really was good, and also really did resemble a cooked spaghetti bolognaise! Yum!

I always try to do something special for Sunday dinners – because of the silly hours we both work, Sunday is essentially our Friday night, and also the only night that we get dinner at a reasonable o’clock. The week before last, we had samosas, carrot and beetroot salad, mixed leaves, cherry tomatoes and an olive dressing. Ian had some sunflower seed and honey bread too.

I know you’ve all seen Pad Thai before, but I did think it looked good on the rectangular plate with some chopsticks! I’d forgotten quite how much I love it!

And, lastly! We went away for the night on the last Sunday in April. I made a lot of travelling snacks, spicy enchilada mix and took a lot of sweet nibbbles too. I made flour wraps for Ian, but I fancied a change from my carrot wraps. So, I made courgette and sweetcorn tortillas. They were super crisp and crunchily good!
